The Bou Café Manifesto
"I was waiting for you. Like every day, at the same time, in the same place. When you entered, they began to prepare me with the usual ritual. You didn't need to say anything. 20 seconds, 7 grams of coffee and a 30 ml cup. A consistent cream, a bright hazelnut color and brindle reflections. Freshly made, like the things in life that you like most. Until today I had not spoken to you in this way but, in reality,We know each other more than you think.
You know about me that I am the coffee thatelaborates the BOU family, the same one that has always triedthis job from sensitivity and passion"
"For this reason, the first thing they do is select the best origins from farms around the world. Next, the roasting process takes place, which is what makes me authentic: a sweet coffee, with an intense aroma and long-lasting flavor. They achieve it roasting the different origins separately with surround roasting® technology so that you simplyyou dedicate yourself to enjoying.Like now, right?
Keep enjoying while I tell you that I am also the coffee ofhospitality professionals who take care of their clientsand they want them to feel at home when they are in their premises. The same ones who smile and have time to ask how your day went."
"From the bar, I am an accomplice of these moments of inspiration, pleasure and togetherness. When you come to this cafeteria to disconnect from work and recharge your batteries. To escape from routine. To celebrate that it is Friday. To meet a friend and savor laughter, talks and complicity. When you come and let yourself go.
Sometimes, what you take with you is coffee to prepare at home. Because you look for new sensations and with me you find them from the first moment. You still don't know if it's because of the cream, the body or the aroma. Or for everything. What you have already verified is that I am a coffee that tastes like coffee, that awakens your emotions and brings out your best version.
And if there's something we both know, it's that we never say goodbye. And we like it that way. Because then, when there is nothing left in the cup, I accompany you and you continue to notice my flavor and the good moments you have lived. Authentic moments full of happiness. That makes you happy, it inspires you.
That's why I am the flavor you take with you. Because I am….Your Bou Café
But what other ways of seeing the business do we see in the market?
In green grain
It all starts with a good selection of green grain origin, because
NOT ALL COFFEES ARE EQUAL
, that is why some are worth a very economical price, because there is no prior selection, all the cherries are seen as money and by not picking correctly, those grains are taken that should be discarded as they are of very poor quality (that is what is most abundant on the market).
On the other hand, there are companies that only look for mature grains selected at the right point of maturation at a higher price but of higher quality, these being the only ones we work in.
CafeGourmetEnCanarias®. only premium quality, gourmet or specialty coffees.
In a brewed cup
There is a direct correlation between the green bean, how it is roasted, and the cup of coffee obtained.
In the market exists Two types of companys the first whose mission is to sell kilos of coffee They see coffee as a simple commodity and any grain is worth it to be able to invoice . This results in unhealthy cups of coffee and a very poor cup taste in terms of cupping.
On the other hand, there are companies in love with good coffee such as
CafeGourmetEnCanarias®, where
are
very demanding with the selection of the green bean, the artisanal surround roasting (15 to 17 min) prepared by expert master roasters who achieve the perfect development of the coffee
in terms of aromas and another very important aspect which is to enhance the melanoids present, an anti-oxidant element.
nte that fixes those aromas obtained in roasting and develops the texture and color of the cream; All this to
key aspects
to get our perfect espresso.

How much do we lose by making a bad choice?
We see every day in the market customers who are not informed and call the same old coffee brands, brands that have the same competitors around them, or worse still, they look for coffee brands that work with very low quality and to compensate for it they give money and encourage to be your choice by offering you what you think is "free" money
We explain where the trick isOh because they give money.
In numerical terms
Much more coffee is used, spending more money
In this table we see how working with our gourmet coffee we have profitability, of at least 133 cups of coffee per kilo , while With low quality coffees we only managed to produce 87, therefore we are already losing up to 46 coffees per kilo. Amazing !
If we read from left to right, according to our weekly consumption, we see how the number of coffees per kilo is lost, which decreases our profitability. and they force you to buy more coffee, spending more money to be able to make the same cups as us.
1 Kilo of our coffee is equivalent to 1.52Kg of low quality (1 and a half bags)
For example: for a typical client with a consumption of 6Kilos/week With our coffee we could make 800 coffees, while if we use a competing coffee that requires a higher grammage, the number of cups of coffee made would drop to 705, 631, 571, or in the worst case, we would only produce 522 coffees. , which translates into 278 fewer coffees per week.
In monetary terms
That smaller number of cups is reflected in lost profits
Now knowing that not all coffees are made the same number of coffees per kilo, if we look at it from a purely economic perspective, this lower profitability translates into a loss of processed coffees, which can reach, as we mentioned before, the 46 per kilo.
In the previous case of our client with an average consumption of 6 Kilos/Week we would be making 800 coffees weekly with those 6 Kilos which would be 3200 coffees monthly and 38,400 cups annually.
As we did previously, if we read from left to right, as the grammage increases, the number of coffees is lost. By using grammages of 8.5, we lose 376 coffees monthly and 4,518 coffees annually, which at a coffee price of €1.20 would be equivalent. to a monetary loss of €5,421.18, but if the grammage continues to increase to 9.5 grams there would already be 8,084 fewer coffees (€9,701.05), until reaching cases As we see daily in the market, coffees that use 11.5 grams to make a single coffee, in this case, for that consumption of 6 Kilos/Week, 13,357 fewer cups would be made and an unrealized profit of €16,027.
In summary
That's where the money they offer you comes from, you are paying it from your work without realizing it.
CafeGourmetEnCanarias® We do not share that vision of the business and we opt for a professional and honest way of working, where our differentiating element is the best premium coffee with which to retain your customers and obtain the highest possible profitability for your effort, because When you think they are giving you money, that money is what you are losing by working with coffees of low profitability and quality.
Now that you know, does what seemed like free or gifted money still seem like a good idea to you?
